Teen Birthday & Chocolate Fudge Cake

A very proud day, my son turned thirteen. After asking what type of cake he wanted, the reply was chocolate Mam of course!


Here is my Chocolate Fudge Cake Recipe taken from a well used book on my bookshelf. A very easy to follow instructions for bread, cakes, pastries and biscuits.

Chocolate Fudge Cake:- 


(serves 8)

Ingredients:

175 g unsalted butter softened, plus extra for greasing
175 g golden caster sugar
3 eggs beaten
3 tbsp golden syrup
40 g ground almonds
175 g self raising flour
40 g cocoa powder

Icing:
225g plain chocolate (or easter egg)
55g dark muscovado sugar
225g unsalted butter
5 tbsp evaporated milk
1/2 tsp vanilla essence

Method:

1. Pre-heat oven to 180C / 350F / Gas mark 4. Grease two 20cm / 8 inch sandwich tins.
2. For icing, place the ingredients in a heavy based saucepan. Heat gently, strring cionstantly, until melted.
3. Pour into bowl and leave cool. Cover and chill for 1 hour or until spreadable.
4. For the cake place the butter and sugar in a bowl and beat together until light and fluffy. Gradually beat the eggs. Stir in the golden syrup and almonds.
5. Sift the flour, salt and cocoa powder into a seperate bowl, then fold into the mixture. Add a little water, if necessary, to make a dropping consistency.
6. Spoon the mixture into the preparared tins and bake for 30-35 minutes, until skewer is clean.
7. Cool in tins for 5 minutes and turn out onto wire rack.
8. When cakes are cool sandwich together with half of the icing. Spread icing over the top and sides, swirling to give a frosting appearance.

We went bowling, and celebrated the day!
